Flaxseed is *crazy* good for your skin so I frequently include it in my meals. I toasted 2 (1 serving) Vans Organic Flax Waffles, which are nice and thick--a great deal for under 200 calories! I added Naturally More Peanut Butter (also with flax), and topped it off with apple slices. It was comfortably filling and so tasty.
I'm always tweaking recipes, and looking for dishes that fit nicely into my skinny jeans. I always want the food I eat to be good for my bod AND delicous.
When I was craving an Egg Benedict-esque dish this morning, this little combo came together. I wanted an egg dish that was healthy, low carb, high fiber, and delicious. I poached two eggs, cut a flaxseed wrap in half and toasted both pieces with mozzerella. I layed a bed of baby spinach leaves (after plucking the stems off each) on the toasted wrap pieces, and then topped each with a poached egg. Finally, I sprinkled garlic herb on top and rolled up for my eating pleasure. So de--lish!! Enjoy :)
